Two-Way Fish
- 1 Fish
- 1 tbsp Hot red bean paste
Ingredients A:
- 3 oz Ground pork
- 1 tbsp Green onion, chopped
- 1 tsp Ginger, chopped
- ½ tbsp Garlic, chopped
Ingredients B:
- ⅓ tsp Salt
- ½ tbsp Wine
- ½ Egg white
- 1 tbsp Cornstarch
Ingredients C:
- Ginger, Bamboo shoot, Mushroom, green onion sections, Snow peas, carrot—each 15 slices.
- Cut off fish head in the place 1" long from fish chin. Cut off tail part in the place 4" long from fish tail. Soak in 4 tbsp Soysauce, deep fry in hot oil. Heat 2 tbsp oil to stir fry “Ingredients A", add hot red bean paste, 1 tbsp wine, ¼ tsp pepper, 4 tbsp soysauce, 1 cup soup stock, add head & tail cook over low heat for hour, place on two side of plate.
- Remove fish meat from middle part, cut into slices, marinate with “Ingredient B” for 15 minutes, deep fry fish slices in 2 cup hot oil 10 seconds, Remove. Heat 2 tbsp oil to stir fry “Ingredients C”, add seasonings (½ tbsp wine, ½ tsp salt,⅓ cup soup stock, 1 tbsp cornstarch, 1 tsp sesame oil) bring to a boil, add fish and mix carefully. Place in the middle part of plate. Serve.
