Sweet Candied Walnuts

Ingredients
  • ¾ cup Walnut halves
  • ½ cup Sugar
  • 1 cup Hot water
  • 2 tbsp Maltose
  • ½ tsp Kuei-hua Jam
  • 3 cup Oil
Preparation
  1. Cook shelled walnuts in 3 cup boiling water for half minutes. Remove and drain.
  2. Boil another 1 cup water in pan. Add sugar and maltose, cook for 1 minutes. Add walnut and kuei-hua. Jam mix well, then pour in a bowl. Soak for 4 hours. Drain.
  3. Deep fry walnuts in 3 cup warm oil (about 120°C) over low heat for 3 minutes till golden brown. Set aside on paper and let cool. Serve.

Notes:

  1. If walnuts are unshelled, soak in boiling water for about 5 minutes, then shell.
  2. Pine seeds or cashewnuts may be used instead of walnut.
