Sweet Candied Walnuts
- ¾ cup Walnut halves
- ½ cup Sugar
- 1 cup Hot water
- 2 tbsp Maltose
- ½ tsp Kuei-hua Jam
- 3 cup Oil
- Cook shelled walnuts in 3 cup boiling water for half minutes. Remove and drain.
- Boil another 1 cup water in pan. Add sugar and maltose, cook for 1 minutes. Add walnut and kuei-hua. Jam mix well, then pour in a bowl. Soak for 4 hours. Drain.
- Deep fry walnuts in 3 cup warm oil (about 120°C) over low heat for 3 minutes till golden brown. Set aside on paper and let cool. Serve.
Notes:
- If walnuts are unshelled, soak in boiling water for about 5 minutes, then shell.
- Pine seeds or cashewnuts may be used instead of walnut.
