Braised Pork Spareribs Wu-Shih Style

Ingredients
  • 1½ lb. Pork sparerib
  • 1½ tbsp Salt
  • 5 Green onion
  • 2 tbsp Wine
  • 3 Green onion knots
  • 2 Ginger slices
  • 1 Star anise
  • 1 Cinnamon bark slice
  • 4 tbsp Soysauce
  • 3 tbsp Sugar
Preparation
  1. Cut sparerib into sentions 2" long, marinate with salt and ¼ tsp saltpeter powder, let stard for 12 hours.
  2. Cook sparerib in boiling water for 1 minute, remove and drain.
  3. Place 5 green onion on bottom of pan, add spareribs, wine, onion, star anise and ginger green, cinnamon bark, 2 cup water, cook over high heat, when boiling, add soysauce, sugar, cook over low heat for 1½ hour till sparerib is tender. Serve.
