Minced Crab Meat with Lettuce

Ingredients
  • ⅔ cup Cooked crab meat
  • ⅓ cup Cooked hard crab roe
  • 6 oz Lean pork
  • ½ Bamboo shoot
  • 8 Water chestnuts
  • 1 Green pepper
  • ½ Carrot
  • 10 White Leeks
  • 1 oz Bean threads
  • 10 Lettuce leaves

Ingredients A:

  • ½ tbsp Soysauce
  • 1 tbsp Oyster sauce
  • ½ tsp Sugar
  • ½ tsp Salt.
  • ¼ tsp Sesame oil
  • ¼ tsp Cornstarch
Preparation
  1. Remove crab meat and roe from steamed crab. Chop crab roe into rice-size pieces.
  2. Cut pork into small cubes marinate with cornstarch and soysauce. Chop cooked bamboo shoot, water chestnuts, carrrot, green pepper and white leeks into small cubes.
  3. Heat 5 tbsp oil to stir-fry pork over high heat. Add all ingredients of “no.2”, crab meat and crab roe, then add “Ingredients A” seasoning sauce, mix thoroughly.
  4. Heat oil to very hot, deep fry bean threads to puff and golden (only 3 seconds). Remove to plate, crush finely. Pour “no.3” over fried bean threads. Serve with lettuce leaves. (Cut into 2½" round pieces, which will be used to wrap around the crab mixture)
