Abalone with Duck's Webs

Ingredients
  • 2 pcs Abalone (canned)
  • 10 pcs Duck's webs
  • 2 tbsp Soysauce
  • 3 Green onion
  • 2 Ginger slices
  • 1 tbsp Wine
  • 2 cup Boiling water
  • 1 tbsp Soysauce
  • ½ tbsp Sugar
  • ¼ tsp Pepper
  • 2 tbsp Flour
  • 1½ cup Soup stock 
  • 2 tbsp Oyster sauce
  • 1 Lettuce
Preparation
  1. Cut off rails from duck's webs. Cook in boiling water for 1 minute, remove and pat dry, marinate with 2 tbsp soysauce for 10 minutes. Deep fry till golden brown.
  2. Heat 1 tbsp oil to stir fry ginger, green onion, add wine, boiling water, duck webs, season with soysauce, sugar, pepper, cook for 20 minutes till duck webs are tender.
  3. Heat 3 tbsp oil to stir fry flour over low heat, add soup stock gradually, stir constantly, add oyster sauce, abalone (sliced) bring to a boil, sprinkle some hot oil, pour over duck's webs.
  4. Cook lettuce (cut into pieces) in boiling water, add ½ tbsp oil and ½ tsp salt, boil for 5 seconds, remove and place under duck's webs on plate.
