Over 13,000 islands make up this lush tropical archipelago. Numerous cultures have flourished here, from the early Hindu and Buddhist empires to the rise of Islam. In the following centuries, Portuguese and British merchants set up trading posts, but the Dutch had the strongest impact, occupying the islands for 250 years. This culinary heritage and the abundance of ingredients, such as rice, chillies, limes, tamarind and spices, has led to the development of exciting dishes such as Nasi Goreng & Gado-gado and Beef Rendang.
