Pork Hoof with Hot Sauce

Ingredients
  • 1 Pork hoof (1½ lb.)
  • 2 Green onion
  • 2 Ginger slices
  • 1 tbsp Garlic, chopped
  • 1 tbsp Hot red bean paste
  • ½ tbsp Vinegar
  • ½ tbsp Hot pepper oil
  • 10 oz Green vegetable

Ingredients A:

  • 2 Star anise
  • 1 tbsp Wine
  • 3 tbsp Soysauce
  • 1 tbsp Sugar
Preparation
  1. Rub some soysauce to Pork hoof,deep fry in hot oil to golden brown, sook in cold water for ½ hour. Heat 2 tbsp oil to stir fry green onion,ginger add “Ingredients A” and 4 cup boiling Water, cook for ½ hour.
  2. Steam pork hoof (with stock) over high heat for 1 hour, remove to a large plate. (leave stock for later use.)
  3. Heat 1 tbsp oil, stir fry 1 tbsp chopped garilic and ½ tsp salt, ½ tbsp vinegar, thicken with cornstarch paste, add 3 tbsp chopped green onion, 1 tsp sesame oil, ½ tbsp pepper oil, pour on pork hoof.
  4. Place stir-fried green vegetable around pork hoof. Serve.
