Poached Shrimp Balls
- 15 Shrimps (or prawn)
- 1 cup Green onion, shredded
- ½ cup Ginger, shredded
- 1 Green onion
- 2 Ginger
- ½ tbsp Wine
- 1 tbsp Shrimp paste
- 1 tbsp Oyster sauce
Ingredients A:
- ⅓ tsp Salt
- ½ tsp Pepper
- 1 tsp Wine
- Shell & devein shrimps, rub with a little salt, rinse and pat dry. Score on back of shrimp, marinate with “Ingredients A” for 10 minutes.
- Add green onion, ginger, wine and 2 tbsp oil in 5 cup boiling water, bring to a boil, put shrimp in soup, cook over high heat for one minute, remove.
- Place shredded green onion and ginger on plate, then place shrimp balls on it, Serve with stir-fried shimp paste and oyster sauce.
Notes:
- Stir fry shrimp paste with 1 tbsp hot oil, add 1 tbsp water, bring to a boil. remove to a small platter.
- Shrimp can be stir fried with hot oil after being poached.
