Braised Duck with Boby Taro
- 1 Duck
- 3 Ginger slices
- 4 Green onion
- 1½ lb. Baby taro
- 1 tbsp Wine
- 1 tbsp Soysauce
- 5. Black mushrooms
- 2 tsp Salt
- 4 cup Boiling water
- Clean duck and cut into 1½" squares, cook in boiling water for a few seconds, remove and drain.
- Remove stems from soaked black mushrooms, pare baby taro. (if the taro is too large, cut into small pieces.)
- Heat 3 tbsp oil to stir fry duck, add ginger, green onion, wine, soysauce, mushroom, taro, 4 cup boiling water, cook over high heat, when boiling, turn to low heat cook for one hour, season with salt and sugar. When duck is tender and the broth is reduced, turn off heat, serve.
