Deep Fried Fish Sticks with Celery Salad

Ingredients
  • 10 oz Fish meat
  • ½ cup Soup stock
  • 1 tbsp Chinese ham (shredded)

Ingredients A:

  • 1 tsp Wine
  • 1 Egg white
  • ⅓ tsp Salt
  • ½ tsp Sesame oil
  • 5 oz Celery
Preparation
  1. Cut fish meat into chopstick thick sticks (2" long) marinate with “Ingredients A” for 15 minutes.
  2. Mix all seasonings in a bowl: 1 tbsp soysauce, 1 tbsp soup stock, 1 tsp sesame oil.
  3. Remove membranes from celery, cut into sections 1" long. cook in boiling water for 10 seconds, remove and soak in cold water. Mix with some sesame oil and salt . Place on plate.
  4. Deep fry fish stick till golden brown, remove in a strainer, sprinkle with ½ cup soup stock, place on celery, splash shredded ham. Finally pour “no.2” seasonings on fish. Serve.
