Yum Goong Hang (Dried Shrimp Salad)
- 1/2 cup dried shrimp
- 2 tbsp. sugar
- 3¼ tbsp. lime juice
- 1 small red onion - sliced
- 1½ tbsp. fish sauce
- 2¼ tsp. chopped chilli pepper
Soak dried shrimp in warm water for 10 minutes. Remove from water and pound lightly. Mix shrimp with all other ingredients and stir for 2 minutes. Place in serving dish and serve.
This dish is most often eaten with rice soup in the morning as part of an Oriental breakfast.
Serves 2-3.
