Kao Padd Goong (Thai Shrimp Fried Rice)

Ingredients
  • 12 large shrimp
  • 1 small onion
  • 1 small tomato
  • 1 tbsp. shrimp fat
  • 1 tsp. minced garlic
  • 2 tsp. catsup
  • 1 tsp. sugar
  • 2 tbsp. fish sauce
  • 2 eggs
  • 6 cucumber slices 1/4" thick
  • 2 green onions-cut the green part off
  • 2 quarters lemon
  • 3 tbsp. cooking oil
  • 2 cups steamed rice
Preparation

Clean green onions and remove tops. Cut tomato and onion into 6 equal pieces. Heat wok over medium high heat. Add oil. Place garlic in oil and fry until light brown. Add shrimp, tomato, onion, catsup, shrimp fat, fish sauce and sugar. Stir in wok for 30 seconds. Add steamed rice. Stir and turn for 1 minute. Add egg and stir for another 1/2 minute. Place on serving plate and put cucumber, lemon and green onion beside fried rice.

This is the basic recipe for Thai fried rice. Pork, chicken or beef may be substituted for shrimp to make other types of fried rice. Makes 2 serving.
