Yellow Fish and Sea Cucumber Potage
- 1 Sea cucumber
- 1 Yellow fish (about 1 lb.)
- ½ cup Bamboo shoot slices
- 2 tbsp Ham slices
- 5 cup Soup stock
- 1 tbsp Green onion, chopped
- 1 tsp Ginger, chopped
- 2 tsp Salt
- 2 tbsp Cornstarch paste
- Pepper
- Chinese parsley
- Clean fish, place on plate, sprinkle 1 tbsp wine, add 2 green onion, steam over high heat for 10 minutes. Remove fish meat when cool.
- Cook sea cucumber in cold water with 1 ginger slices, 1 green onion and 1 tbsp wine for 10 minutes. Cut into small cubes when cool.
- Heat 2 tbsp oil to stir fry green onion (chopped), ginger, add fish meat, 1 tbsp wine, pour soup stock, add sea cucumber, bamboo shoot, ham, bring to a boil, season with salt, thicken with cornstarch paste. Remove to a large soup bowl, splash pepper, put some Chinese parsley on top. Serve.
