Yellow Fish and Sea Cucumber Potage

Ingredients
  • 1 Sea cucumber
  • 1 Yellow fish (about 1 lb.)
  • ½ cup Bamboo shoot slices
  • 2 tbsp Ham slices
  • 5 cup Soup stock
  • 1 tbsp Green onion, chopped
  • 1 tsp Ginger, chopped
  • 2 tsp Salt
  • 2 tbsp Cornstarch paste
  • Pepper
  • Chinese parsley
Preparation
  1. Clean fish, place on plate, sprinkle 1 tbsp wine, add 2 green onion, steam over high heat for 10 minutes. Remove fish meat when cool.
  2. Cook sea cucumber in cold water with 1 ginger slices, 1 green onion and 1 tbsp wine for 10 minutes. Cut into small cubes when cool.
  3. Heat 2 tbsp oil to stir fry green onion (chopped), ginger, add fish meat, 1 tbsp wine, pour soup stock, add sea cucumber, bamboo shoot, ham, bring to a boil, season with salt, thicken with cornstarch paste. Remove to a large soup bowl, splash pepper, put some Chinese parsley on top. Serve.
