Vegetarian Cold Dish

Preparation

Here are two kinds of arrangements: "Plain arrangement" and "Mold cold dish".

Each plate has 2 vegetarian dishes with garnishing in center.

Plain arrangement

1. Cold Bean Sprouts Rolls with Chili Sauce
Boil bean sprouts for 10 seconds, let cool, wrapped with dried bean curd sheets and roll into spring roll shapes. Fried with hot oil till crispy. Cut into sections and mix with chili sauce (1 tbsp sesame seed paste, 2 tbsp soysauce, ½ tbsp sugar, 1 tbsp sesame oil, It. vinegar, 2 tsp fried sesame seeds, ½ tsp brown peppercorn powder, ½ tbsp hot pepper oil). Arrange on left side of plate.

2. Vegetarian Duck
Mix shredded black mushroom, cooked carrot strings, turnip strings and salted cabbage strings thoroughly. Place 6 Dried bean curd sheets together in layers and brush each with season-ings (soysauce, sugar, sesame oil, soaking mushrooms stock). Put all the vegetables strings in center and wrap tightly into rectangle 2" x 6".

Steam for 10 minutes, fry with a little hot oil till golden brown. Cut into slices and arrange on opposite side of cold bean sprouts rolls.

Mold cold dish

1. Stewed Black Mushrooms with Brown Sauce
Heat 2 tbsp oil to stir fry green onion, add soaked black mushrooms, 2 tbsp soysauce, 1tbsp sugar, pour ½ cup soaking mushroom stock, bring to a boil, turn to low heat and cook for 3 minutes, place in to a round bowl. Put brised wheat gluton on top. Press for 10 minutes. Turn bowl over to re¬move mushrooms on one side of plate.

2. Spicy Cabbage
Cut Chinese cabbage into strings, marinate with a little salt for half day, squeeze dry. Heat 1 tbsp oil and 1 tbsp sesame oil to stir fry ½ tbsp brown peppercorn, add 3 tbsp sugar, 3 tbsp Vinegar, 3 tbsp ginger strings and 3 tbsp red pepper strings, bring to a boil, pour on babbage. Soak for half day, place in a bowl. Turn bowl over to transfer on the other side of plate.
