Thai Golden Brown Spare Ribs

Ingredients
  • 4½ lbs. spare ribs
  • 3 tbsp. minced garlic
  • 2 tbsp. fish sauce
  • 1/2 tsp. garlic powder
  • 1 tsp. msg (optional)
  • 1½ tsp. sugar
  • 1 tsp. black pepper
  • 1 tbsp. rice wine or cooking wine
  • 2 oz. chopped Chinese parsley
  • 2½ cups cooking oil
  • 2 tbsp. Golden Mountain sauce
Preparation

Separate ribs and cut into 4" lengths. Place minced garlic, fish sauce, garlic powder, msg, Golden Mountain Sauce, sugar, black pepper, wine and Chinese parsley in mixing bowl. Add ribs and stir until thoroughly mixed. Let ribs marinate in sauce for 30 minutes.

Preheat wok over high heat. Add oil and wait until hot. Remove ribs from bowl and carefully place in wok. Fry for 2 minutes at high heat. Lower to medium heat and fry until golden brown. Remove from wok. Place ribs in colander for 1 minute to allow excess oil to drain off. Place on platter and decorate with slices of cucumber, tomato and lime.
