Ingredients
  • 8 oz. ground pork
  • 1 small red onion
  • 1 green onion
  • 1 oz. cashew nuts
  • 3½ tsp. lime juice
  • 1 tsp. sugar
  • 1/2 oz. dried chili
  • 1/2 oz. fish sauce
  • 2 oz. fresh Chinese parsley
  • 1 cup water
  • 2 quarters lime or lemon
  • 1/4 head lettuce
  • 1 small cucumber
  • 1/2 tsp. ground pepper
  • 1 tsp. msg (optional)
Preparation

Slice cucumber. Thinly slice red onion and green onion. Deep fry cashew nuts and dried chili until nicely browned.

Preheat wok over high heat. Add water and bring to a boil. Stir in ground pork. Stir until cooked. Drain water. 

Add red onion, green onion, lime juice, sugar, fish sauce, parsley and ground pepper. Stir 3-4 times. Turn off heat. Arrange lettuce on serving plate and place pork mixture on top. Arrange cucumber and lemon slices beside pork. Top with cashew nuts and fried chili. 

Serves 1-2.
