Sweet and Sour Diced Chicken

Ingredients
  • ½ lb. Half chicken or chicken breast
  • ½ cup Cornstarch
  • 2 Pineapple slices
  • ½ cup Green pepper, diced
  • ½ cup Onion, diced
  • 20 pcs Carrot slices
  • 10 pcs. Sour ginger slices
  • 1 tbsp Red pepper, diced

Ingredients A:

  • ½ tbsp Soysauce
  • ½ tbsp Wine
  • 1 Egg yolk
  • ½ tsp Salt
  • ½ tsp Sugar
  • 1 tbsp Cornstarch paste
Preparation
  1. Remove bone from chicken then cut into 1 inch squares, marinate with “Ingredients A” for 30 minutes. Coat chicken with cornstarch deep fry chicken in hot oil till brown (about 2 minutes). Take out, reheat oil then fry once more until crispy.
  2. Mix sweet & s our Sauce in a bowl : 3 tbsp sugar, 3 tbsp vinegar, 3 tbsp catsup, 1 tbsp worcestershire sauce, 4 tbsp water, ½ tsp salt, ¼ tsp sesame oil, 1 tbsp cornstarch.
  3. Heat 2 tbsp oil to stir fry onion, carrot, pineapple, ginger and green pepper, stirring constantly. Add “no.2”, bring to a boil. Turn off heat, add chicken, mix well and serve immediately.
