Shredded Beef with Assorted Vegetables
- 8 oz Beef
- ½ Bamboo shoot
- 4 Black mushroom
- 1 Green pepper
- ½ Carrot
- 2 oz Leeks
- 3 oz Celery
- ½ Onion
- 1 Red pepper
- 2 oz Rice noodle
- Cut beef into strings, marinate with ½ tsp soysauce, ¼ egg white, ½ tsp cornstarch, 1 tbsp water, ¼ tsp baking soda for 1 hour.
- Deep fry rice noodle in hot oil for 2 seconds, remove to a plate, crush.
- Cut cooked bamboo shoot, carrot, green pepper into strings, cut leeks and celery into sections 1" long. Cut onion and soaked black mushooms into strings.
- Deep fry beef strings in 2 cup hot oil, remove and drain.
- Heat 3 tbsp oil to stir fry onion, black mushroom, bamboo shoot, carrot, green pepper, celery, then add beef, add seasonings: 1 tbsp wine, 2 tbsp soysauce, ⅓ tsp salt, ⅓ tsp sugar, ⅓ tsp pepper, ⅓ tsp sesame oil, ½ tbsp cornstarch, 3 tbsp water (mix previously). Stir fry over high heat, add leeks, mix well, remove to cover rice noodle. Serve.
