Salted Egg Yolk with Prawns & Shrimps

Ingredients
  • 6 Prawns
  • 4 oz Shrimps (smashed)
  • 4 Water chestnuts
  • ½ Egg white
  • 3 Salted egg yolk
  • 1 cup Soup stock

Ingredients A:

  • ¼ tsp Salt
  • 1 tsp Cornstarch
  • 1 tbsp Ginger and green onion juice
Preparation
  1. Shell prawns (leave head and tail), score lengthwise on back and let spread out to a large piece. Marinate with a little salt and wine.
  2. Add “Ingredients A” to smashed shrimp, stir in one direction with several chopsticks till very stiff. Chop water chestnuts finely and mix with shrimp.
  3. Dredge some flour on prawns, place 1/6 shrimp mixture on each prawn's back, then insert half salted egg yolk in center, steam over high heat for 15 minutes.
  4. Heat 1 tbsp oil, pour soup stock, add salt, then thicken with cornstach paste, pour over prawns, garnish with stir-fried green vegetables.
