Roast Duck with Assorted Fresh Fruit

Ingredients
  • ½ Roast duck
  • 1 Pear
  • 1 Kiwi (or Muskmelon)
  • 1 Mango (or Papaya)
  • 4 pcs Pineapple
  • 1 Cucumber
  • 6 pcs Lichee
  • 6 pcs Cherry
  • 3 oz Jellyfish, shredded
  • Chinese parsley

Ingredients A:

  • 1 tbsp Sugar
  • 1 tbsp Vinegar
  • Salt
  • Sesame oil
Preparation
  1. Cut roast duck into sticks (⅓" wide, 2" long) divide into 6 parts, arrange on plate (refer to picture).
  2. Peel kiwi, mango, pear, cut into same size stick as duck, arrange on plate between each two ducks. (refer to picture).
  3. Arrange pineapple slices around ouside of duck on plate, and cucumber slices in the center to make a circle.
  4. Boil jellyfish strings in boiiling water for a few seconds, remove and soak in cold water till soft, drain dry and mix with “Ingredients A” seasonings, place in ceenter of cucumber circle.
  5. Remove seeds from lichee, and replaced by cherry, place on duck's both sides. Mix all seasonings of “Ingredients A”, put into a small bowl, this is dipping sauce.

Fresh lichee can be replaced by canned lichee or grape. Pineapple can be replaced by sliced orange.
