Rice Soup with Shrimp
- 1 cup steamed rice
- 2 cups water
- 10 large shrimp
- 1 oz. Chinese parsley
- 1 oz. ginger
- 1 tbsp. chopped green onion
- 1/4 tsp. sugar
- 1/4 tsp. black pepper
- 1/4 tsp. msg (optional)
- 1½ tbsp. fish sauce
- 1/3 tsp. celery salt
- 1 tbsp. minced fresh garlic
- 2 tbsp. cooking oil
- 2 fresh eggs
Clean and devein shrimp. Slice parsley and ginger into small pieces. Boil water in a saucepan over high heat. Add rice. Stir shortly. Add shrimp, sugar, msg, fish sauce, celery salt, black pepper and eggs. Allow to boil for 1 minute. Cover with lid and remove from heat.
Place oil in a small pan over high heat. Add minced garlic and stir until brown. Pour 1/2 over top of rice soup. Pour remainder in small bowl to be used as a sauce by those who wish. Place ginger, parsley and green onion on top of rice.
Serves 2.
