Golden Brown Eggs with Fresh Ham

Ingredients
  • 3½ lbs. fresh ham
  • 10 eggs
  • 1 tsp. salt
  • 4½ tbsp. raw sugar
  • 5 tbsp Golden Mountain Sauce
  • 3 tbsp black soy sauce
  • 2 cloves of peeled garlic
  • 1 cinnamon stick
  • 3 star anise
  • 1½ oz. lily buds
  • 2 green onions
  • 3 black mushrooms
  • 1/4 cup cooking oil
  • 9 cups water
Preparation

Cut ham in pieces 3" wide. Hard boil eggs and peel. Cut green onion in half. Soak black mushrooms for 15 minutes, then slice 1/2" wide. Soak lily buds in water for 15 minutes. Set all-aside.

Preheat wok over high heat. Add oil. Stir fry garlic, green onion, cinnamon stick, star anise, raw sugar, salt, Golden Mountain Sauce and soy sauce for 30 seconds. Add eggs and 5 tbsp. water. Stir 6-8 times. Remove eggs.

Place fresh ham in wok with sauce. Spoon sauce over ham for 30 seconds. Turn heat to high. Add water, lily buds, black mushrooms and eggs. Let boil for 10 minutes. Lower to medium heat and turn ham. Simmer for an additional 20 minutes or until the meat is tender. Remove to serving dish. 

Serves 6 to 8.
