Nam Prik Ong (Ground Pork in Red Sauce)
- 1½ cups ground pork
- 4 large tomatoes
- 1½ tbsp. red curry paste
- 1/2 tsp. shrimp paste (gapi)
- 1 tbsp. fish sauce
- 2 tbsp. clear soy sauce
- 1 small red onion
- 1 tbsp. lime juice
- 1½ tbsp. sugar
- 1/2 tsp. garlic salt
- 3 tbsp. cooking oil
- 1¼ cup water
Cut tomatoes into small cubes. Chop red onion.
Preheat wok over high heat. Add oil. Place ground pork and red curry paste in wok. Stir for 1 minute.
Add tomatoes, red onion, fish sauce, soy sauce, garlic salt, sugar. Stir for 40 seconds.
Add water and lime juice. Stir 1 minute and lower heat to medium. Simmer for 15 minutes. Turn off heat and place in serving dish. Serve with fresh lettuce, fried pork rind, cucumbers and cabbage.
Makes 3 to 4 servings.
