Haw Moak (Thai Steamed Fish)

Ingredients
  • 1 egg
  • 8 oz. fish fillets 2" thick
  • 1¼ tbsp. fish sauce
  • 3 fresh chili peppers cut in strips
  • 1 tsp. rhizone powder
  • 1½ tsp. red curry paste
  • 1/2 tsp. sugar
  • 6 oz. coconut milk
  • 3 oz. sweet basil leaves
  • 1/2 tbsp. corn starch
  • 6 or 7 lettuce leaves
Preparation

Place all ingredients except lettuce and sweet basil in mixing bowl. Stir gently until well mixed. Place lettuce and sweet basil in bottom of deep bowl. Pour mixture of fish and spices into the bowl. Place chili on top as decoration. Place in steamer and cover with lid. Steam for 30 minutes. Serves 2 persons.

This recipe may also be used with ground pork instead of fish. Simply replace fish with 8 oz. of fresh pork and prepare as directed. Makes 1-2 serving.
