Spicy Stir Fried Squid

Ingredients
  • 8 oz. large squid
  • 2 oz. sweet basil leaves
  • 1 small onion
  • 2 green onions
  • 1 small tomato
  • 1½ tsp. shrimp fat
  • 1 tbsp. nam prik pao
  • 1 tbsp. fish sauce
  • 1 tsp. sugar
  • 1 tsp. minced garlic
  • 3 chilies
  • 3 tbsp. cooking oil
  • 2 tbsp. water
Preparation

Clean squid and slice in pieces about 1½" wide and 2" long. Slice onion into strips 3/4" wide. Cut green onion into 2" lengths. Cut tomato into 6 pieces and slice chili into strips.

Place oil in wok and heat over high flame. Stir fry minced garlic until light brown. Add onion, green onion and tomato. Stir for 20 seconds. Add squid, fish sauce, nam prik pao, sugar, chili, basil leaves, and shrimp fat while stirring. Continue to stir until squid begins to curl. Add water and stir for an additional 30 seconds. Remove and place on serving plate.

Serves 1 to 2 persons.
