Fresh Ham Curry with Morning Glory

Ingredients
  • 10 oz. morning glory or water cress
  • 6 oz. sliced fresh ham
  • 1 tbsp. red curry paste
  • 1 tbsp. ground coriander root 
  • 1/2 tsp. shrimp paste
  • 3 tbsp. fish sauce
  • 2½ tbsp. palm sugar or raw sugar
  • 2 oz. red onion
  • 3 cups coconut milk
  • 5 tamarind pods
Preparation

Pound red onions. Mix tamarind pods with 1/2 cup water and squeeze to make juice. Remove pods.

Preheat wok over medium high heat. Pour in coconut milk and boil. Add ham and lower to medium heat. Allow to simmer while preparing next ingredients.

In a separate pan over high heat, place 1/2 cup coconut milk from wok containing ham, red curry paste, onion, coriander root, shrimp paste, fish sauce and palm sugar. Stir for 1 minute. Pour over ham in wok.

Turn wok to high heat and boil for 10 minutes. Add morning glory or water cress and tamarind juice. Cook for 3 minutes. Remove and place in serving bowl. 

Serves 3 to 4 persons.
