Chicken or Shrimps in Coconut Milk Soup (Tom Kha Kai or Goong)
- 4 cups water or clear soup broth
- 1½ cups coconut milk
- 1 tbsp chop fresh chili or ground pepper
- 3/4 cup chicken breasts-sliced or 6-8 Fresh Shrimps
- 2 stock lemongrass-cut 1 inch long
- 5-10 wildlime leave sliced 1/2
- 1½ tsp salt
- 1½ tbsp sugar
- 1 tbsp fish sauce
- 1/3 cup lemon or lime juice
- 3/4 cup sliced fresh mushroom
- 2 tbsp chopped green onion
- 1/3 cup sliced kha (wild ginger root)
Place wok over high heat and add water or soup broth, coconut milk, kha and Lemon-grass bring to a boil. Add chicken or shrimps and wait until chicken or shrimps is cooked. Add remaining ingredients. Serves 4.
