Yum (Spicy Seafood Salad)

Ingredients
  • 6 large oysters
  • 5 large shrimp
  • 4 oz. squid
  • 1 stalk lemon grass
  • 2 oz. fresh mint leaves-cleaned
  • 2 green onion
  • 1 small onion
  • 1⅓ tbsp. fish sauce  
  • 1¼ tsp. sugar  
  • 1 tsp. msg (optional)  
  • 4½ tsp. lemon or lime juice
  • 1 tsp. sliced hot pepper or ground hot pepper 
  • 3 cups water
  • 2 small tomatoes
Preparation

Clean squid and slice into strips 1" wide. If using fresh oysters, remove from shell. 

Clean and devein shrimp. Slice lemon grass and green onion into very thin pieces. Cut tomatoes into 6 pieces each. Slice onion. Place water in a saucepan and boil. 

Add shrimp, oyster, and squid. Boil for 1 minute. Remove from stove and drain all water leaving seafood in pan. 

Place all other ingredients in pan. Stir until all ingredients are well mixed. Place on serving plate covered with lettuce leaves.
