Stir Fried Chicken with Tomato and Egg
- 1 cup sliced chicken breast
- 5 eggs
- 2 oz. celery
- 2 tomatoes
- 2 green onions
- 1 onion
- 1 tsp. sugar
- 1/2 tsp. garlic salt
- 2 tbsp. fish sauce
- 2 tbsp. water
- 1 tsp. sake
- 3 oz. cooking oil
Cut celery into thin slices. Cut onion into 6 pieces and tomatoes into 8 pieces each. Cut green onions into 2" lengths.
Preheat wok over high heat. Add cooking oil and wait until hot. Add chicken and stir for 2 minutes. Add celery, tomatoes, onion, green onion, sugar, garlic salt and fish sauce. Stir 2 or 3 times. Add all eggs and stir gently to break yolks and mix with other ingredients. Cook for 1 minute. Flip or turn over and cook for an additional minute. Then add water and stir 4 or 5 times. Sprinkle with sake and remove to serving plate.
Makes 2 servings.
