Steamed Spareribs with Spicy Rice in Lotus Leaver
- 1 lb. Pork spareribs
- 3 Large pieces lotus leaves
- 12 Tooth picks
- 1 cup Flavored rice powder
Ingredients A:
- 2 tbsp Soysauce
- 2 tbsp Fermented sweet rice
- ½ tbsp Soy bean paste
- ½ tbsp Hot bean paste
- 1 Green onion
- 2 Ginger slice
- 2 tbsp Oil
- 3 tbsp Water
- ¼ tsp Pepper
- 1 tsp Fermented red bean curd
- Cut pork spareribs into 2" long sections. Marinate with “Ingredients A” for 30 minutes.
- Mix with flavored rice powder and place one piece of pork sparerib on a lotus leaf (cut each lotus leaves in 4" pieces.)
- Fold up the leaf, then fold the left and right sides to center and roll to make a package, seal with tooth pick, then with smooth side face down arrange on the bottom of a bowl.
- Steam over high heat for 3 hours until tender.
Notes:
- The fresh lotus leaves is better then dried leaves. Soak with warm water, clean and cut into several pieces.
- To make flavored rice powder:
Stir-fry 1 cup of uncooked rice in dry pan with 2 star anise and 1 tbsp brown peppercorns over low heat for 5 minutes until brown, let cool and grind finly. - Cellophane paper can be used instead of lotus leaves.
