Steamed Fish Tail with Yellow Bean Sauce

Ingredients
  • ½ Straw carp tail
  • 2 Green onion
  • ½ tbsp Wine
  • 1 Fermented beans
  • 5 tbsp Oil

Ingredients A:

  • 2 tbsp Ground pork
  • 1 tbsp Green onion
  • ½ tsp Ginger juice
  • 1 tsp Garlic, chopped
  • 1 tbsp Soysauce
Preparation
  1. Clean the straw carp diagonally cut 2 slashes on each side, marinate with wine (about 5 minutes). Place over green onion (place 5 or 6 green onions on the platter first) Steam for 8 minutes, Transfer to a clean platter.
  2. Mix “Ingredients A” in a large bowl.
  3. Chop fermented yellow bean finely. Heat 5 tbsp oil to stir fry “no.2” till dry and crispy, add fermented yellow bean, soysauce, stir fry over low heat until the mixture bubbles.
  4. Pour the sauce over the top of the straw carp. Serve.

In addition to fish you may use prawns, Oysters or bean curd to cook this way.
