Pla Muk Yad Sai (Stuffed Steamed Squid)

Ingredients
  • 5 or 6 medium sized squid
  • 1 cup ground pork
  • 2 tbsp. cooking oil
  • 1 tbsp. water
  • 2 tbsp. clear soy sauce
  • 1/2 tbsp. fish sauce  
  • 1/2 tsp. sugar  
  • 1 tbsp. corn starch
  • 1/4 tsp. black pepper  
  • 1 tsp. cooking wine  
  • 1 tbsp. finely chopped fresh Chinese parsley
Preparation

Put water in steamer and place over high heat. Clean squid thoroughly making sure to remove outer skin. Rinse, drain and allow to dry while preparing stuffing. 

Place pork in a mixing bowl and add starch, oil, Chinese parsley, sauces, sugar, water, black pepper, and cooking wine. Use a spoon to fold and mix together. 

While holding the squid in the left hand, use a teaspoon to stuff the. pork mixture into the squid. Make sure squid is firmly filled. Place squid in large bowl suitable for use in steamer. 

Place in steamer and allow to steam for 20 minutes. Carefully remove from steamer. The steaming process will have created a delicious broth with the squid which should not be wasted.
