Lotus Root Soup with Pork & Ham

Ingredients
  • 6 oz Pig belly with skin (fresh bacon with rind)
  • 6 oz Chinese ham
  • 1 Lotus root, sections
  • 2 tbsp Green onion, chopped
  • 3 Green onion knots
  • 2 Ginger slices
  • 1 tsp Salt
  • 1 tbsp Wine
Preparation
  1. Brush and clean Chinese ham, cut into ½" long pieces, cook in 6 cup boiling water with green onion and ginger for 10 minutes. Cut pig belly into pieces, add in pan and cook together with ham for 20 minutes.
  2. Scolp lotus root, cut into 1" long sections, then along the grain cut into slices, put into soup and cook for ½ hour. Season with salt, pour into soup bowl, splash chopped green onion, serve.
