Ingredients
  • 3 lbs. duck
  • 3 pieces star anise
  • 1 stick cinnamon
  • 3 oz. raw sugar
  • 2½ tsp. garlic salt
  • 2 cloves garlic
  • 4 green onions
  • 1 medium ginger root
  • 2 tbsp. cooking wine
  • 4 tbsp. black soy sauce
  • 3 oz. cooking oil
  • water

Sauce:

  • 1 tbsp. minced garlic
  • 1½ tbsp. sugar 
  • 2½ tbsp. hot water
  • 1/4 tsp. salt
  • 2 tbsp. vinegar
Preparation

Peel garlic and crush with cleaver. Lightly pound ginger. Cut green onion 5" long. Preheat wok over high flame. 

Add oil. When oil becomes hot, add all ingredients except duck and water. Stir until well mixed. Lower heat. Place duck in wok and baste until duck is thoroughly coated. Return stove to high heat and add enough water to cover about half duck. 

Bring to a boil then lower to medium heat. Allow duck to cook for 25-30 minutes. Turn duck over and cook for another 25-30 minutes. 

Remove duck from wok and cut. Pour remaining sauce from wok over duck and serve with sauce described below.

Sauce:
Mix all ingredients together and place in sauce bowl.
