Ding-Bian-Tso Fu-chou Potage
- 2 tbsp Shrimp sauce
- Leek flower, sections
- Rice powder (20% glutinous rice, 80 % rice)
- Dried red shallot, chopped
Ingredients A (each a small portion):
- Dried squid, shredded
- Black mushroom
- Dried lily flowers, soaked
- Dried wood ear, soaked
- Dried shrimp, soaked
- Pork
- Shirmp
- Oyster
- Mix rice powder with water to make a paste. Heat the pan and rub a little oil, pour in ½ cup rice paste to make a thin pan cake. Remove when done, use this method to make several cakes. Cut into strips.
- Put all ingredients of “A” in 5 cup boiling water, add 2 tbsp shrimp sauce, 1 tbsp wine, ½ tsp salt, ½ tbsp sugar, ½ tsp pepper, M.S.G., cook for 5 minutes, put in 2 tbsp lard, oyster and rice strips, bring to a boil, remove to individual serving bowl.
- Splash dried red shallot, leek flower. Serve.
Notes:
- This is a famous Fu-chou potage (breakfast), ingredients are optional.
- Rice powder is hard to make, you can buy rice powder sheets.
- Soak 20% glutionous rice and 80% rice for 6 hours, mash and press dry, this is rice powder.
