Braised & Smoaked Chicken
- 1 Chicken (about 3 lb)
Ingredients A:
- 1 cup Soysauce
- 3 tbsp Wine
- 10 cup Soup stock
- 2 tbsp Sugar
- 3 Ginger slices
- 2 Green onion
- 1 pack Five spice powder
Ingredients B:
- 1 cup Rice
- ½ cup Sugar
- ½ cup Red tea leaves
- Cook “Ingredients A” in a pan over low heat for 40 minutes. This is flavored stock.
- Clean the chicken. Pour boling water in chicken's belly, then pour out the water. Cook the chicken in flavored stoch over medium heat, bring to a boil, turn over, bring to a boil again, turn off heat, soak for 10 minutes. Remove.
- Place a piece of paper (8" square) in an used wok. put “Ingredients B” over paper, add a rack over this, and place chicken on the rack. Cover and smoke over low heat for 5 minutes, turn over, smoke for 5 minutes. Turn off heat Remover and brush with oil and flovored stock.
- Cut into small pieces, then arrange on the plate. Serve.
A pack of five spicys contends: 1 star anise, ½ tbsp brown peppercorn, 1 piece dried orange peel, 1 piece licorice root, ¼ tsp cinnamon.
