Iced Fruit Mountain

This dramatic display of fruit arranged on a "Mountain" of ice cubes is bound to delight your guests. Cut the pieces of fruit larger than for a fruit salad and supply cocktail sticks for spearing.
Ingredients
  • 1 star fruit
  • 4 kumquats
  • 6 physalis
  • 225g / 8oz seedless black grapes
  • 225g / 8oz large strawberries
  • 1 apple and/or 1 Asian pear
  • 2 large oranges, peeled
  • 8 fresh lychees, peeled (optional)
  • 1 Charentais melon and/or ½ watermelon
  • caster sugar, for dipping
  • wedges of kaffir lime, to decorate
Preparation
Step 1
  1. Slice the star fruit and halve the kumquats. Leave the hulls on the strawberries. Cut the apple and/or Asian pear into wedges, and the oranges into segments. Use a melon bailer for the melon or, alternatively, cut the melon into neat wedges. Chill all the fruit.
  2. Prepare the ice cube "mountain". Choose a wide, shallow bowl that, when turned upside down, will fit neatly on a serving platter. Fill the bowl with crushed ice cubes. Put it in the freezer, with the serving platter. Leave in the freezer for at least 1 hour.
  3. Remove the serving platter, ice cubes and bowl from the freezer. Invert the serving platter on top of the bowl of ice, then turn platter and bowl over. Lift off the bowl and arrange the pieces of fruit on the "mountain".
  4. Decorate the mountain with the kaffir lime wedges, and serve the fruit at once, handing round a bowl of sugar separately for guests with a sweet tooth.

COOK'S TIP

The list of fruits is just a suggestion. Use any colourful seasonal fruits.
