Braised Pork Hoof with Hairlike Sea Weed

Ingredients
  • 1 Pork hoof (about 2 lbs)
  • 3 oz Dried hairlike sea weed
  • ½ lb Green cabbage
  • 5 Garlic
  • 1 Star anise
  • ½ cup Soysauce
  • 1 tbsp Sugar
  • ½ tbsp Wine
  • 4 cup Boiling water
Preparation
  1. Cut pork hoof into pieces 1½" wide, clean and boil in water for 1 minute. Drain.
  2. Fry garlic in 1 tbsp oil Sprinkle wine, soysauce and boiling water, add star anise, simmer for 1 hour until pork hoof is tender, season with sugar and salt.
  3. Soak dried sea weed in worm water till soft. add a little bit of oil to clean the hairlike sea weed. Rinse with water, put on the bottom of a bowl then place the pork hoof on top, steam for 30 minutes. Turn over onto a serving plate, pour stock on top.
  4. Cook green cabbage in boiling water (add 1 tbsp oil in water) boil for 20 seconds. Drain and place on the plate, arrange arround the pork hoof.
