Butterfly Prawns

Prawns prepared this way cook quickly and curl attractively.

Raw prawns
  1. Remove the heads and body shells of the prawns, but leave the tails intact. Pull out the intestinal cords with tweezers.
  2. Make a cut through the belly of each prawn.
  3. Gently open out the two halves of the prawn so that they will look like butterfly wings.
