Stir Fried Pork with Sour Cabbage
- ½ lb. Pork (bacon or leg)
- 2 pieces Sour cabbage (bok choy) northern style
- 3 tbsp Green onion, chopped
- 5 tbsp Oil
- 10 oz Green bean threads
- 1 tbsp Dried black wood ear
- 1 tbsp Soysauce
- ½ cup Soup stock
- ½ tsp Salt
- Cut the pork into thin slices. Shred the sour bok choy: Soak the black wood ear and green bean threads to soft.
- Heat 5 tbsp of oil, stir fried pork, add chopped green onion and soysauce, stir fried again, then add sour bok choy, wood ear, green bean threads (cut into sections 3" long) and soup stock cover and cook for 3 minutes.
- Season with salt, stir fried until the stock absorbe. Serve.
Usually, the sour bok-choy is supposed to cook in a Hot-pot or a casserole. Shredded pork, green bean threads or other ingredients may be cooked together with soup stock. Especially when you have poached meat slices in Hot pot (sha-pu sha-pu), sour bok-choy strings may be added in soup, to make the soup tastier and less greasy.
