Steamed Beef with Spicy Rice Powder

Ingredients
  • 1 tbsp Fermented red bean curd
  • 1 tbsp Hot bean paste
  • ½ cup Flavored rice powder
  • 1 Sweet potato
  • ¼ tsp Chili powder
  • ¼ tsp Brown peppercorn powder
  • ¼ tsp Chinese parsley
  • ¼ tsp Green onion, Chopped

Ingredients A:

  • 1 tbsp Fermented sweet rice
  • ½ tbsp Oil
  • ½ cup Water
  • ¼ tsp Salt
Preparation
  1. Cut beef into slices 1½" square, marinate with “Ingredients A” for about 20 minutes mix with rice powder.
  2. Cut sweet potato in small pieces, place on bottom of small steamer, then place beef on top. Steam for 20 minutes over high heat.
  3. Sprinkle chopped green onion chili powder, chinese parsley, and brown peppercorn powder over the beef, transfer beef (with steamer) on table and serve hot.

In Sze-Chuan reestaurart, numerous layers of small steamers are piled up on the stove, always ready to serve. The upper layers which are steamed longer are tenderer and well done. The new portione added on the bottom layers are medium or rare. The guests may order well done or rare ones according to their taste.
