Spicy Southern Thai Fried Rice
- 6 large cleaned shrimp
- 6 large scallops
- 4 pickled artichoke hearts (halved lengthwise)
- 3 fresh crushed chillis
- 2 tbsp chopped basil leaves
- 2 tbsp chopped onion
- 2 tbsp chopped green onion
- 1 tsp minced fresh garlic
- 1½ tsp sugar
- 2½ tbsp fish sauce
- 3½ tbsp cooking oil
- 2 cups steamed rice
Devein shrimp and cut scallops in half. Heat wok over medium high heat.
Add oil, place garlic and chillis in oil and fry until light brown.
Add shrimp, scallops, stir in wok for 40 seconds.
Add steamed rice and remaining ingredients. Stir gently for 2 or 3 minutes. Place on serving plate, garnish with fresh fruit or cucumber.
