Ingredients
  • 3 lbs. duck
  • 3 oz. honey
  • 2 tbsp. Golden Mountain Sauce
  • 1/2 tbsp. clear soy sauce
  • 1 tsp. garlic salt
  • 1½ tbsp. cooking wine  
  • 1 tbsp. raw sugar

Sauce:

  • 2 oz. black soy sauce
  • 1½ tbsp. vinegar
  • 1½ tsp. sugar
  • 1 tsp. thinly sliced hot pepper
  • 1 tsp. warm water
Preparation

Rub inside of duck cavity and outside of duck with garlic salt. Mix cooking wine, raw sugar, honey and sauces together in a small bowl. Pour mixture in and on duck. Massage gently a few times to help absorption of sauce into duck. Let set for 30 minutes.

Heat oven to 375 degrees. Place duck in baking pan and put in oven with breast side up. Cook for 25 minutes. Turn duck over and cook for a further 25 minutes.

Remove from oven. Cut and arrange on serving dish. Serve with sauce described below.

Serves 3-4 persons.

Mix ingredients together and place in sauce dishes.
