Beef Curry with Pumpkin

Ingredients
  • 8 oz. beef
  • 1 small pumpkin
  • 2½ cups coconut milk
  • 2½ tsp. red curry paste
  • 1 tsp. msg (optional)
  • 3-4 fresh chilies
  • 4 oz. sweet basil leaves
  • 3 tbsp. fish sauce
  • 2½ tsp. sugar
  • 1/2 cup water
  • 1/2 tsp. salt
  • 6 makrut leaves
Preparation

Cut beef into slices 1/2" thick. Peel pumpkin and cut 1 cup of 1" square pieces. Slice chilies into strips.

Preheat wok over medium heat. Add 1/2 cup coconut milk. Stir in red curry paste and continue to stir for 3 minutes. Add beef, fish sauce, salt and sugar. Stir for 30 seconds. Turn heat to high. Add pumpkin, remainder of coconut milk and water. Boil for 2 minutes.

Lower to medium heat and simmer for 15 minutes. Add chillies, makrut, msg and sweet basil leaves. Stir shortly and remove to serving dish. Serves 2.
