Vietnam and Philippines Food
Vietnam borders China, Laos and Cambodia, in the heart of South-east Asia, and it is not surprising that its cuisine has much in common with its neighbours. The north nearest China, stir-fries and mild curries are popular; further south there is a strong French influence. Rice, the staple, is bolstered by baguettes. Pates, herb salads, rare beef and casseroles feature alongside traditional dishes served with the pungent fish sauce, nuoc mam.
In the Philippines, dishes such as Puchero, Escabeche and Adobo of Chicken owe much to their Spanish origins, but have their own distinct flavour.
