Paper Wrapped Fish with White Leeks

Ingredients
  • ¾ lb. Yellow fish meat
  • 2 tbsp White Leeks
  • 12 Ham, shredded
  • 12 Parsley leaves
  • 12 Shredded black mushroom
  • 12 Cellophane paper (5" x 5")

Ingredients A:

  • ½ tsp Ginger juice
  • 2 tbsp Oil
  • ½ tbsp Wine
  • ½ tsp Salt
  • 1 tsp Sesame oil
  • ¼ tsp Pepper
  • 1 tbsp Fried flour
Preparation
  1. Cut fish meat into strips 2" long. Marinate with “Ingredients A”, then mix with white leeks (cut into 1" sections).
  2. Brush the center of cellophane paper with sesame oil. Place 1 piece parsley in center and one shred ham to the left of it and one shred mushroom to the right of it. Lay 5 fish strips and a little white leeks on top. Fold the papper to make a tight package.
  3. Heat oil (260°C) to deep fry packages over low heat till fish turns white. Remove and place attractively on a platter.

Fried flour is to stir fry flour with a little bit oil over low heat till the color turns yellow.
