Grilled Fish
- 4 fish 8" to 10" long
- 4 oz. salted butter
- 1/2 tsp. garlic powder
- 7 banana peppers
- 1/2 thinly sliced green onion
- 2 tbsp. fish sauce or Golden Mountain sauce
- 5 tsp. lemon juice
- 2 tsp. sugar
Sauce:
- 2 tbsp. tamarind juice
- 1/2 tsp. salt
- 2 tbsp. fish sauce
- 1 tbsp. sugar
- 1 or 2 tbsp. ground pepper
- 3 tsp. lemon juice
Clean and rinse fish thoroughly leaving head and tail intact. Melt butter and garlic powder together in a small saucepan. Pour inside of fish stomach. Wrap each fish in foil. Place over hot grill for 10 minutes. Turn and grill other side for 10 minutes. Remove foil and place on serving plate. Serve with sauce described below.
Sauce:
Grill banana peppers until dark brown. Thinly slice and place in sauce dish. Add fish sauce, lemon juice, sugar and green onion. Stir thoroughly.

- 1 tbsp. sugar
- 1 or 2 tbsp. ground pepper
- 3 tsp. lemon juice
Mix in small bowl.
